Cranberry Wild Rice

Cranberry Wild Rice
Recipe adapted by Marilyn Dougherty, RD/LD

1 cup fresh cranberries
1/3 cup brown sugar
1/4 cup chopped walnuts
1 Tbs reduced fat tub margarine
3 cups cooked wild and brown rice mix
1/3 cup orange juice
2 Tbs red wine vinegar

Cook cranberries, margarine, sugar, walnuts over medium heat until cranberries are coated with sugar. Stir in cooked rice, orange juice, and vinegar. Mix well and cook together for about 5 minutes.

Serves: 10, approx 130 calories, 2 gm fat, 2 gm fiber.
