Cornish Game Hens
Serves 4
4 Cornish game hens (1 pound each)
1/2 tsp salt
pinch of pepper
1/4 tsp curry powder
1/4 tsp ground ginger
1/2 cup apple cider juice
1/2 cup orange juice
Thaw Cornish hens overnight in refrigerator. Wash hens under running water and rinse cavities. Combine salt, pepper, curry and ginger. Rub over hens to season. Secure legs with white thread. Place hens on rack in roasting pan; baste with apple cider juice. Cover loosely with foil and roast in preheated 375 degree oven about 30 minutes. Uncover and baste with orange juice; reduce temperature to 325 degrees and bake another 20-30 minutes until tender and golden. Remove hens from drippings to serve; place each hen on a plate with a serving of Brown Rice Stuffing. Drizzle orange sauce over the hen and stuffing. Garnish with parsley.

Orange Sauce
1/4 cup "Take Control" margarine
2 tablespoons orange marmalade, no sugar added
1/4 tsp ground ginger
Combine all ingredients in small saucepan; stir over medium heat.
